Prix Fixe Menus: 
These are prototypical menus based on the menus that were well received for the Grog and Gruel Bermuda Ocean Race (Annapolis to Bermuda), Merion to Bermuda Race, Cruising Club of America Rendezvous and deliveries to the Caribbean. You can order 3 or 300 meals, as long as you have freezer capacity. Our unique packaging and synthetic dry ice can act as an ancillary freezer for several days, but an on board freezer capacity is required.
All sous vide (under vacuum) entrees are simmered for ten minutes, in their bags, nine minutes for a medium rare filet mignon. When serving several crew at a time, we recommend that the tops of each plastic bag are opened, placed standing up in the water, then flooded so the hot water can circulate between the component sauce and side dishes and do not get mixed up. Cooking time is the same. We recommend that once the pouches are opened and the meals plated, you put the empty pouches in the water used to heat which rinses them, then after dinner simply flatten and throw out the empty rinsed plastic pouches. This eliminates any smell and vastly shrinks garbage. Each day is packed separately by the day you indicate when ordering. You can heat easily in salt water.
